Basic chocolate biscuit recipe

This is a recipe that I have used for a long time and it is a great biscuit. One of the great things about this recipe is that you can use it for so many things for example I have made wagon wheels, freckle biscuits and even tim tams.

I originally found this recipe in the Woman's weekly book 'Cookies'

Ingredients

125g soft butter

165g light brown sugar

1 egg

225g plain flour

35g self raising flour

25g cocoa powder

Method

1) Preheat oven to 180c and line two large trays with baking paper.

2) Cream together the butter, brown sugar and egg until they are combined.

3) Sift the flours and cocoa in a bowl then add into butter mixture in two parts then mix until it forms a soft dough

4) Roll out your dough on a floured surface then cut out whatever shape you want, next place them on the baking trays and bake for 12-15 minutes or until you can push a cookie and have it slide on the tray.
