Another one of my all time favorite recipes are these chocolate brownies from the book Fay's family food by Fay Ripley.
A cool thing about these is that you can add a lot of different things to it like choc chips, nuts etc.
Ingredients
180g butter
180g milk or dark chocolate
3 large eggs
260g caster sugar
80g plain flour
50g cocoa powder
choc chips or whatever you are adding in
Method
1) Preheat oven to 180c and line a square baking pan with baking paper.
2) Melt together the chocolate and butter over a bain marie or a double boiler on medium heat then set aside to cool down.
3) Whisk together the eggs and sugar in a medium sized bowl.
4) Sift together the flour and cocoa in a small bowl.
5) Slowly add the chocolate mixture to the egg and sugar then whisk until combined.
6) Fold in the flour and cocoa and whatever else you are adding to your brownies then pour into the lined tin and bake for 15-20 minutes or until you can poke a skewer and not have any batter on it.
